Healthy Recipes: Broccoli Oatmeal Patties

These broccoli oatmeal patties are not only quick to make, but they are also rich in many healthy nutrients.

You can enjoy them warm, but also cold and they are ideal as a snack, side dish, lunch or dinner.

Did you know that broccoli is one of the healthiest vegetables? The green blossoms provide a lot of vitamin C for a well-functioning immune system and also contain calcium, selenium and a lot of iron.

It goes wonderfully with a green salad and avocado cream. The next celebration with friends or family is coming up? Then you can make healthy burgers out of it too. For this, you take healthy whole grain rolls and top them with the patties, an avocado cream, cucumbers and a green salad.

Ingredients for broccoli oatmeal patties

  • 250 g broccoli, coarsely grated
  • 2 tablespoons parsley, coarsely chopped
  • 100 g oatmeal
  • 50 g soy yogurt
  • 25 g sesame
  • 1 onion, finely diced
  • 1 tablespoon kuzu mixed with 1 tablespoon water
  • Sea salt
  • Corn breadcrumbs
  • Coconut oil, for frying

Preparation of the broccoli oatmeal patties

Step 1
Roughly grate the broccoli and mix well with the oat flakes, coarsely chopped parsley, sesame seeds, soy yoghurt and finely chopped onion.

Step 2
Season the mixture with sea salt and leave to stand for 20 minutes.

Step 3
Add Kuzu and mix well again. If the mixture is not firm enough, then add some more corn breadcrumbs.

Step 4
Then shape into patties, coat in corn breadcrumbs and fry in hot coconut oil for about 4-5 minutes on each side.

Tip:
Spelt flakes can be used instead of oatmeal.
These give the patties a nutty aroma.
